Method
- Lard and season the beef. Cut small pockets all over the beef topside with a sharp knife and push small strips of root vegetable or fat trimmings in if you have them; generously season all over with salt and pepper. This extra step rewards you later with flavour running through the joint.
- Sear the joint hard. Heat a little oil in a heavy casserole or Dutch oven over a high heat until it just starts to smoke. Sear the topside on all sides for 2–3 minutes per side until deeply browned all over — don't rush this; the crust is the backbone of the sauce.
- Soften the vegetables. Lower the heat to medium, add the roughly chopped onion and root vegetables to the same pot and cook for 8–10 minutes, stirring occasionally, until softened and beginning to colour at the edges.
- Braise low and slow. Return the beef to the pot, pour in enough water to come about one-third of the way up the joint, cover tightly and cook in an oven preheated to 160 °C (fan 140 °C) for 90 minutes, turning the meat once halfway through. The beef is ready when a skewer meets little resistance at the thickest point.
- Rest and slice the beef. Lift the beef onto a board, cover loosely with foil and rest for at least 15 minutes. Slice across the grain into generous pieces roughly 1–2 cm thick.
- Build the cream sauce. Blitz the braising vegetables and all the cooking juices with a stick blender until completely smooth, then pass through a fine sieve back into the pot for a truly silky result. Stir in the cream, bring gently to a simmer over a medium-low heat and season to taste — the sauce should be pale, sweet and lightly aromatic. If it feels too thin, simmer uncovered for a few minutes until it coats the back of a spoon.
- Warm the dumplings. Steam or briefly microwave the bread dumpling slices for 2–3 minutes until warmed through and fluffy — they should be soft but hold together when lifted.
- Plate and finish. Lay two slices of dumpling on each warmed plate, top with slices of beef and spoon the cream sauce generously over. Add a dollop of cranberries and serve immediately — tradition calls for a thin slice of lemon on the side.
Safety & hygiene Important
- Beef internal temperature. Although topside is a whole muscle cut, make sure it reaches at least 70 °C internally for the full 90-minute braise to ensure safe serving — use a meat thermometer to check at the thickest point before resting.
