How Michelin stars work: what one, two and three stars really mean
Michelin's own wording for each level, the five criteria inspectors judge, what does not count, how a star is won and lost, the Bib Gourmand, Green Star and Keys, dated counts for the world and the US, and how to eat (and cook) like an inspector.

Michelin stars in five lines
A Michelin star is an award the MICHELIN Guide gives a restaurant for the food on the plate, nothing more. Anonymous inspectors judge five criteria, and the restaurant gets one, two or three stars, reviewed every year.
- Three levels. In Michelin's February 2026 wording, One Star is for "top quality ingredients, where dishes with distinct flavors are prepared to a consistently high standard" (worth a stop); Two Stars when "the personality and talent of the chef are evident" and the food is "refined and inspired" (worth a detour); Three Stars for "superlative cooking" that is "elevated to an art form" (worth a special journey).2
- Five criteria. "Ingredient quality, harmony of flavors, the mastery of culinary techniques, how the chef's personality shines through their cuisine and, crucially, consistency across the entire menu and over time."1
- Only the food. Michelin awards Stars "for the food on the plate" and nothing more: decor, service and the wine list don't count.1
- Restaurants, not chefs. A restaurant keeps its star when the chef changes, as long as the cooking holds.1
- Every year. Stars are reassessed annually; if the cooking slips, the star is simply not re-awarded.1

This page explains how the stars work. For how starred kitchens build a plate, see our companion guide to Michelin star plating. Sources are at the bottom.
What one, two and three Michelin stars mean
| Level | Michelin's current wording (February 2026) | The classic label |
|---|---|---|
| One MICHELIN Star worth a stop | "This distinction is awarded to restaurants using top quality ingredients, where dishes with distinct flavors are prepared to a consistently high standard. These restaurants are worth a stop." | "A very good restaurant in its category." |
| Two MICHELIN Stars worth a detour | "Two Stars are awarded when the personality and talent of the chef are evident in their expertly crafted dishes, and their food is refined and inspired. These restaurants are worth a detour." | "Excellent cooking, worth a detour." |
| Three MICHELIN Stars worth a special journey | "Our highest award is given for the superlative cooking of chefs at the peak of their profession: Their cooking is elevated to an art form and some of their dishes are destined to become classics. These restaurants are worth a special journey." | "Exceptional cuisine, worth a special journey." |
The current wording is from Michelin's "MICHELIN Guide 101" of February 2026.2 A November 2025 explainer phrases the levels slightly differently and leaves out the "worth a" lines,1 so expect both versions around the web. The three-tier system itself dates from 1931. Michelin's own history gives the classic English labels alongside it, and they were still in use when the first New York guide appeared in 2005: "A very good restaurant in its category", "Excellent cooking, worth a detour" and "Exceptional cuisine, worth a special journey".4, 27 Restaurant pages still use a short form, such as "Three Stars: Exceptional cuisine" on The French Laundry's.8
The line you will often see for one star, "High quality cooking, worth a stop", is Michelin's own current wording. Its restaurant pages use "High quality cooking" as the one-star label ("One Star: High quality cooking"), 45 and its selection announcements print the full line, as in the 2025 Northeast Cities and Texas tallies.17, 21 CNN dates it to the criteria of 1936,9 but the classic one-star label above was still in use in 2005,27 so it is a later wording. The table quotes the fuller 2026 wording.
Is there a four-star Michelin restaurant? No. Three Stars is the "highest award".2 What there isn't is a quota: Michelin says there is no limit on how many Stars it can award in a year.1
The five criteria for a Michelin star
The same five apply in every country and to every restaurant in the guide, starred or not.1, 2 The names below are Michelin's own.

1. The quality of ingredients
Michelin's words: The quality of ingredients
Everything starts with what comes in the back door. One Star is, in Michelin's own words, for restaurants "using top quality ingredients".2 Quality here means the produce itself, so a plate can only be as good as what went into it.

2. The harmony of flavors
Michelin's words: The harmony of flavors
In plain terms: do the parts of a dish belong together? A plate can be technically perfect and still taste like three good ideas sharing a plate; harmony is about how the flavors work as one.2

3. The mastery of techniques
Michelin's words: The mastery of techniques
Fish cooked to the exact point, a sauce with a mirror shine, a crust that stays crisp. The current wording asks for dishes that are "expertly crafted" at Two Stars and "elevated to an art form" at Three.2

4. The personality of the chef
Michelin's words: The personality of the chef as expressed through their cuisine
Could you tell whose kitchen this came from? Two Stars, in the 2026 wording, are awarded when "the personality and talent of the chef are evident"; the UK inspectors' page speaks of the "personality and emotion" a chef conveys.2, 5

5. Consistency
Michelin's words: Consistency across the entire menu and over time
The criterion Michelin calls crucial: "consistency across the entire menu and over time".1 Different inspectors visit "throughout the seasons, for lunch and dinner, both on weekends and during the week", so the last course on a quiet Tuesday must match the first on a Saturday.1
Watch for the old list. An older Michelin page gives a different five: "quality of the ingredients used, mastery of flavor and cooking techniques, the personality of the chef in his cuisine, value for money and consistency between visits."6 Many explainers still copy it. Value for money is no longer a star criterion; it has its own award, the Bib Gourmand.
What does not count toward a Michelin star
Michelin answers the question directly. Are decor and style factored in? "This might come as a surprise, but no, not at all." Does service play a part? "Another potential surprise: no." Each restaurant sets its own style of service, from counter ordering to carefully choreographed table service, and that "has no bearing on whether the restaurant receives a MICHELIN Star." Do inspectors consider the wine list? "No."1
"The style of a restaurant and its level of comfort or formality have no bearing on the award. You can find MICHELIN Stars everywhere from street food stalls to grand palaces." Michelin's own example is Jay Fai, a street-food stall in Bangkok.1 Comfort used to have its own separate symbol: the fork-and-spoon "covers" rating, which recorded decor, table setting and service so the stars didn't have to.6

How Michelin inspectors work
- They are full-time employees, not volunteersEvery decision is made by MICHELIN Guide inspectors, who are "all full-time employees and former restaurant and hospitality professionals".1
- They stay anonymous and pay the billInspectors book "always under an assumed name" and "pay their bill in full, just like anyone else". The exception is the wine inspectors, who do not work anonymously.2
- They come back as many times as it takesMichelin publishes no fixed number of visits for each level. It says it will "dine at a restaurant as many times as it takes to get the complete picture", with different inspectors across seasons, lunch and dinner, weekdays and weekends.1
- They decide together, and unanimouslyStars are decided at meetings of the International Director, the local editor and all the inspectors involved. They are "awarded unanimously"; if the room disagrees, "further visits are organised until a consensus is reached".5
- There is no quotaAsked whether there is a limit on how many Stars can be awarded in a year: "No, there is no limit."1
- No application for Stars, and no feedbackRestaurants already in the guide don't apply for Stars; Michelin reassesses them continually. Any restaurant or hotel can ask for an inspectors' visit through the Contact Us section of the guide's website, and the inspectors will visit the next time they are in the area. Michelin gives no feedback to restaurants.1, 2

How a restaurant gains or loses a star
Gaining one. No restaurant applies for a Star. Inspectors find restaurants (or visit one that asked to be considered), keep returning, and a star appears in the next edition of the regional or national guide once the team agrees unanimously.1, 2, 5 Michelin wants a Three Star restaurant to "serve Three Star meals without fail", which is why consistency weighs so heavily.1
Losing one. "We make our Guides for our readers, so if we feel the cooking at a restaurant is no longer at the same level that it was, then we would not re-award the Star the following year."1 It happens at the top too: in the 2025 Northeast Cities selection, released in November 2025, three restaurants went from three Stars to two: Alinea in Chicago, Masa in New York and The Inn at Little Washington in Virginia.18, 19, 20, 40, 41Restaurants get no explanation.1
Giving one back. There is no formal way to return a star. In September 2017 Sébastien Bras, whose Le Suquet in Laguiole had held three stars for 18 years, asked to be left out of the guide.29, 30 Michelin let the restaurant leave the 2018 edition, "the first time it has ever allowed a restaurant to withdraw from its pages".30 Michelin said no chef had asked before purely on a whim, though restaurants had left after "a change in [restaurant] concept or closing the business".31 Le Suquet was back in the 2019 guide with two stars, without the chef's consent.32
Chefs with many stars. Because stars belong to restaurants, a chef's tally is the sum of their restaurants. CNN reports that Joël Robuchon held 31 stars across 15 countries as of 2016.9
Bib Gourmand, MICHELIN-selected, Green Star and Keys
| Distinction | Who gets it | Levels | Since |
|---|---|---|---|
| MICHELIN Stars | Restaurants, for the cooking | One, Two or Three Stars | 1926 (one star); 1931 (three levels) |
| Bib Gourmand | Restaurants, for good cooking at good value | One level | 1997 (forerunner 1957) |
| MICHELIN-selected | Restaurants in the guide without a distinction | A listing, no award | Plate symbol 2016; renamed since |
| Green Star | Restaurants, for sustainability | One level | 2020, by most accounts; being phased out in 2026 |
| MICHELIN Keys | Hotels | One, Two or Three Keys | 2024 |
| MICHELIN Grapes | Wineries | One to Three Grapes | new |
| Special Awards | People and teams: Young Chef, Service, Sommelier, Opening of the Year | Named awards | 2017 |
Bib Gourmand vs Michelin star
A star rewards the cooking at any price; the Bib Gourmand is Michelin's "award for great value", for "simple yet skillful cooking at an accessible price". 1 It is named after Bibendum, the Michelin Man, and first appeared in 1997;2 its forerunner, a mark for "good meals at moderate prices", dates from 1957.4 More than 3,000 restaurants hold one, and the price threshold "varies a little from country to country depending on the cost of living".7
Michelin doesn't publish the thresholds on its explainer pages. The latest US figure in our sources is New York's in 2022: two courses and a glass of wine or dessert for $49 or less, tax and tip not included.10 We found no current US figure in Michelin's own pages, so treat $49 as a 2022 number.
MICHELIN-selected (formerly the Plate)
Most restaurants in the guide have no distinction at all. Michelin now calls them MICHELIN-selected: places "that aren't yet at the level of a Star or Bib Gourmand, but still provide a great dining experience", judged "in exactly the same way as Starred restaurants" on the same criteria.2 They used to carry the Plate symbol, launched in the 2016 Paris guide for restaurants that "simply serve good food".6 We found no announcement or date for the change of name.
The Green Star, being phased out
The Green Star marked restaurants for their sustainability work; most accounts date it to the France 2020 guide, though we could not read Michelin's original announcement. More than 600 restaurants held one.12 On 18 May 2026 Michelin announced that "the MICHELIN Green Star initiative, limited to gastronomy, will be gradually phased out" and launched Mindful Voices, an editorial platform for people in gastronomy, hospitality and wine, from 1 June 2026.11 Green Queen reports it will be retired by the end of 2026.12
MICHELIN Keys for hotels
Since 2024 hotels have their own three levels: "One MICHELIN Key: A very special stay", "Two MICHELIN Keys: An exceptional stay" and "Three MICHELIN Keys: An extraordinary stay", judged on five hotel criteria, from the hotel as a destination in itself to consistency between the quality of the experience and the price paid.2 The first selection, in France in April 2024, named 189 hotels (24 with three Keys); the US followed on 24 April 2024.13 Michelin also now awards Grapes to wineries, and since 2017 its Special Awards (Young Chef, Service, Sommelier, Opening of the Year) have honored people and teams rather than restaurants.2

A short history of the Michelin stars
Why does a tire company rate restaurants? Because the guide began as a tire company's free handbook for motorists. In 1900, when France had fewer than 3,000 cars, the Michelin brothers gave away a guide with maps, tire-changing tips, fuel stops and places to eat and sleep.3, 4 The stars came 26 years later, and 2026 is their centenary.3, 9
| Year | What happened |
|---|---|
| 1889 | André and Édouard Michelin found their tire company in Clermont-Ferrand, when France had "fewer than 3,000 cars".3 |
| 1900 | The first Michelin Guide: maps, how to change a tire, where to buy fuel, eat and sleep. "35,000 copies were given out for free", and it stayed free for two decades.4, 3 |
| 1904 | The first edition outside France, for Belgium.4 |
| 1920 | After André reportedly saw guides propping up a workbench, a new guide goes on sale at seven francs ("man only truly respects what he pays for"), with no paid advertisements and the first Paris hotel listings.3, 4 |
| 1926 | The guide begins awarding stars to fine dining, "initially marking them only with a single star".3 CNN counts 46 starred restaurants that first year.9 |
| 1931 | "A hierarchy of zero, one, two, and three stars" arrives.3 Michelin's own history says the single star "expanded to the present three-star system" that year.4 |
| 1936 | The criteria for the starred rankings are published.3 |
| 1957 | The guide starts flagging "good meals at moderate prices", the feature now called the Bib Gourmand.4 |
| 1997 | The Bib Gourmand symbol, Bibendum licking his lips, appears.4, 7 |
| 2005 | The first US guide, New York City 2006, is announced in November 2005: 507 restaurants, with Alain Ducasse, Jean-Georges, Le Bernardin and Per Se at three stars.27, 28 |
| 2016 | The Plate symbol (L'assiette) appears in the Paris guide for restaurants that "simply serve good food".6 |
| 2018 | For the first time, Michelin lets a restaurant leave the guide at its chef's request: Sébastien Bras's Le Suquet.30 |
| 2024 | MICHELIN Keys for hotels, starting with 189 hotels in France in April and the US later that month.13 |
| 2026 | A hundred years of Michelin stars.9 In May, Michelin announces that the Green Star will be phased out in favour of a new platform, Mindful Voices.11 |

Michelin star restaurants in the US
Michelin's USA listings show 275 starred restaurants: 16 with three Stars, 40 with two and 219 with one, plus 447 Bib Gourmands (3 October 2026).15 The first US guide was New York City's, announced in November 2005.27, 28 These are the 16 three-star restaurants:
| Where | Three-star restaurants |
|---|---|
| San Francisco | Atelier Crenn, Benu, Californios, Quince |
| Healdsburg, California | SingleThread |
| Sonoma, California | Enclos |
| Yountville, California | The French Laundry |
| Los Angeles and West Hollywood | Providence, Somni |
| San Diego | Addison |
| New York City | Eleven Madison Park, Jungsik, Le Bernardin, Per Se, Sushi Sho |
| Chicago | Smyth |
California has ten of them, New York City five and Chicago one. Californios and Enclos were new at three Stars in California's June 2026 selection, and Sushi Sho in New York's 2025 selection.15, 16, 18 The US is covered by regional guides, each revealed on its own date, usually at a ceremony:
| Latest US edition | Released | Three | Two | One |
|---|---|---|---|---|
| California 202616 | June 2026 | 10 | 13 | 60 |
| Northeast Cities 2025 (New York City, Chicago, Washington DC, Boston, Philadelphia)17 | November 2025 | 6 | 22 | 93 |
| Texas 202521 | October 2025 | 0 | 0 | 18 |
| American South 202522 | November 2025 | 0 | 1 | 18 |
| Florida 202623 | May 2026 | 0 | 2 | 24 |
| Colorado 202624 | September 2026 | 0 | 1 | 9 |
| Southwest 2026 (Nevada, Arizona, New Mexico, Utah)25 | August 2026 | 0 | 1 | 4 |
| Sum of the latest editions | 16 | 40 | 226 |
The editions add up to 226 one-star restaurants against 219 on the live listing. The 7 missing are all in guides released in October and November 2025; they are most likely restaurants removed after closing, though we couldn't confirm the reason for each. That is why this page quotes the live figure. The American Great Lakes (Cleveland, Detroit, Indianapolis, Milwaukee, Minneapolis and Pittsburgh) gets its first selection at a ceremony in Detroit on 21 April 2027.26, 46
Who pays for the Michelin Guide?
Not the restaurants. "Inclusion in The MICHELIN Guide is free of charge."2 The guide dropped paid advertising in 1920,3 and inspectors pay for every meal.2
Sometimes the tourist board. Destination marketing organizations do pay Michelin to bring a guide to their region. Nexstar Media reported in January 2025, citing other outlets, that California paid $600,000 in 2019 (per the New York Times), Florida $1.5 million (per the Miami Herald), Atlanta $1 million (per NPR) and Texas $2.7 million in all (per the Fort Worth Report). New York City, the first US guide, predated that kind of funding.28 Michelin's North America chief inspector told Nexstar: "The involvement of DMOs in establishing new Guides does not have any influence on the Inspectors' judgments regarding the destination assessment, the restaurants in the selection, or award distinctions."28 It does explain why some regions have a guide and others don't, which is the point of Nexstar's report.
Nine Michelin star myths
- “Chefs win Michelin stars”Restaurants do. "MICHELIN Stars are awarded to restaurants, not chefs. If a restaurant promotes a sous chef or brings in a new head chef and they maintain the same standard of cooking, then the restaurant will keep its Star."1 "Michelin-starred chef" is everyday shorthand for the chef of a starred restaurant. The only Michelin awards for people are the Special Awards, such as Young Chef and Sommelier.2
- “You need white tablecloths”Michelin calls its supposed preference for formal restaurants one of the biggest misconceptions about the guide: "even street food can earn a Star, like the iconic Jay Fai in Bangkok." A starred restaurant can be "a pub in Yorkshire, an elegant restaurant in a grand hotel in Paris or a noodle shop in Hong Kong."1
- “Inspectors tell you why you lost a star”Asked whether it ever gives feedback to a restaurant, Michelin's answer is one word: "No."1
- “The star leaves when the head chef is away”Michelin's own explainer quotes the exchange: "Who cooks when you're away?" "The same people who cook when I am here."1
What the research says about Michelin stars
Economists and management researchers have studied how stars line up with prices, survival and reviews. None of these papers blind-tastes the food: they measure prices, closures, diner surveys and online reviews. Here is what each found, and what it does not show.
- A star goes with higher pricesWhen Michelin arrived in New York, the restaurants it rated saw their Zagat food and decor scores rise, which the authors estimate added about 30% to prices per star. Restaurants that raised prices on decor or service alone were likelier to close, while better food went with survival.33 In a random sample of French restaurants from 1970 to 1994, prices tracked rating changes, and restaurants raised prices relative to others as early as two years before a promotion, most likely, the authors suggest, to pay for the upgrades they hoped would earn it.34 What they don't show: what a starred meal costs today. The 30% is a model estimate from Zagat survey scores in the years after 2005, not menu prices, and in France prices started rising before the star arrived.
- A star goes with a higher risk of closingAcross two decades of elite New York restaurants, a star went with a higher chance of closure. The author ties it to tougher negotiations with landlords, suppliers and staff, and to higher customer expectations.35 This is the main peer-reviewed study behind what people call the "Michelin curse"; we found no paper with that title. What it doesn't show: that a star causes most closures, or that the pattern holds outside New York.
- Losing a star can improve online ratingsIn the Great Britain and Ireland guide from 2010 to 2020, restaurants that lost a star then got better TripAdvisor ratings. The authors trace this mostly to lower diner expectations, though they cannot fully rule out changes on the restaurant's side, such as service.36 In 8,871 English-language TripAdvisor reviews of 87 European restaurants, sentiment fell after a star was awarded, most of all about service, while sentiment about price rose.37 What they don't show: that the food changed. They measure what reviewers wrote, and expectations move with the stars.
- Stars are an artistic success more than a business oneA survey of chefs at 36 restaurants that held two or three stars over a ten-year period, in France, Belgium, the UK and Switzerland, found them highly successful as craftsmen but far more mixed in financial success.38 What it doesn't show: today's figures; it dates from 2005 and asked the chefs themselves.
- The system is built to avoid false starsA 2005 study argues that Michelin leans hard against starring an undeserving restaurant, accepts that it will miss some deserving ones, and that this caution explains the system's stability.39 What it doesn't show: how often that happens; it draws on 20 interviews with starred chefs, not Michelin's own records.
Eat like an inspector
Our suggestions for what to notice at a starred meal, one question per criterion. They are a way to taste with attention, not Michelin's own method.
| Criterion | What to notice |
|---|---|
| Ingredients | Can you taste the main ingredient clearly? Does it taste of its season, or of the sauce? |
| Harmony | Does every element on the plate belong? Is anything there only for show? Is the salt, acid and richness balanced? |
| Technique | Is the fish just cooked, the sauce glossy, the crisp thing still crisp, the hot plate hot? |
| Personality | Would you recognize this kitchen from one dish? Is there something you haven't eaten anywhere else? |
| Consistency | Is the seventh course as precise as the first? Would it be the same at a quiet weekday lunch? |
| Ignore | The chairs, the napkin fold, the wine list and the formality of the service: Michelin says none of them count. |
Cook a starred-style dinner at home
You can't win a star at home, but the five criteria make a good brief for a dinner party: a few excellent ingredients, every element on the plate earning its place, one technique done precisely, one dish that is unmistakably yours, and the last plate as neat as the first.
- Plan the run. A tasting menu at home works best with most courses made ahead; the course meal builder lays out a 3, 5 or 7-course menu in order from real recipes.
- Open with one bite. An amuse-bouche sets the tone before the first course and can be made the day before.
- Plate it like the pass. Michelin star plating breaks the fine-dining plate into six parts you can copy, and the plating techniques glossary shows every named move.
- Be consistent. Plate all the guests' plates at once, one component at a time, so plate six matches plate one.

Michelin Guide terms, defined
MICHELIN Star
A distinction the MICHELIN Guide awards to a restaurant, never to a chef, for the food on the plate alone; there are three levels, reviewed every year.
Worth a stop, a detour, a special journey
The closing line of Michelin's wording for One, Two and Three Stars; the classic labels already used 'worth a detour' and 'worth a special journey'.
The five universal criteria
Michelin's test for every restaurant in the guide: quality of ingredients, harmony of flavors, mastery of techniques, the chef's personality in the cuisine, and consistency across the menu and over time.
MICHELIN inspector
A full-time Michelin employee with a restaurant or hospitality background; restaurant inspectors dine anonymously, pay the bill and each evaluate more than 250 meals a year.
Bib Gourmand
Michelin's distinction for good cooking at good value, introduced in 1997; the price threshold varies by country with the cost of living.
Bibendum · the Michelin Man
The Michelin Man, the figure who gives the Bib Gourmand its name.
MICHELIN-selected restaurant · formerly the Plate
A restaurant in the guide without a distinction, judged on the same criteria as starred restaurants; it used to carry the Plate symbol introduced in 2016.
MICHELIN Green Star
Michelin's sustainability distinction for restaurants, held by more than 600 of them and being phased out during 2026.
Mindful Voices
The editorial platform for people in gastronomy, hospitality and wine that Michelin launched in June 2026 as the Green Star is phased out.
MICHELIN Key
Michelin's distinction for hotels since 2024: One Key for a very special stay, Two for an exceptional stay, Three for an extraordinary stay.
Special Awards
Michelin awards for people and teams rather than restaurants, such as Young Chef, Service, Sommelier and Opening of the Year, given since 2017.
Covers · the fork-and-spoon symbol
The guide's older comfort rating, drawn as forks and spoons, which recorded what stars do not: decor, table setting and service.
Destination marketing organization (DMO)
A tourism board; some have paid Michelin to bring a new guide to their region, which Michelin says does not influence inspectors' judgments.
Michelin stars, answered
What is a Michelin star?
A Michelin star is an award the MICHELIN Guide gives a restaurant for the food on its plates, judged by anonymous inspectors on five criteria: ingredients, harmony of flavors, technique, the chef's personality and consistency. It goes to the restaurant, not the chef, comes in one, two or three stars, and is reviewed every year.
What is the difference between 1, 2 and 3 Michelin stars?
One star means top quality ingredients and distinct flavors at a consistently high standard, worth a stop. Two stars mean the chef's personality and talent show in refined, inspired dishes, worth a detour. Three, the highest, means superlative cooking elevated to an art form, worth a special journey. That is Michelin's own February 2026 wording.
How many Michelin stars can a restaurant have?
Three at most. Three Stars is Michelin's highest award and there is no fourth. There is also no quota: Michelin says there is no limit on how many Stars it can award in a year. A chef can hold more than three only by running several starred restaurants.
How do restaurants get a Michelin star?
By being visited and judged by inspectors; there is no application for a Star. Restaurants in the guide are reassessed continually, and any restaurant can ask Michelin for an inspectors' visit through the guide's website. Inspectors visit anonymously as often as it takes, then decide together at a meeting, and a Star is only awarded unanimously.
Who are Michelin inspectors, and do they pay for their meals?
They are full-time Michelin employees who used to work in restaurants and hospitality. They book under an assumed name, pay the bill in full and each evaluate more than 250 meals a year. Only the wine inspectors work openly. Michelin sets no fixed number of visits per star level.
Can a restaurant lose a Michelin star?
Yes. Stars are reassessed every year, and if the cooking is no longer at the same level, Michelin does not re-award the Star the following year. It gives no feedback. In November 2025 three restaurants went from three Stars to two: Alinea in Chicago, Masa in New York and The Inn at Little Washington in Virginia.
Do chefs or restaurants get Michelin stars?
Restaurants. Michelin says its Stars go to restaurants, not chefs, and a restaurant that changes head chef keeps its Star if the cooking stays at the same standard. 'Michelin-starred chef' just means the chef of a starred restaurant. Michelin's only awards for individuals are its Special Awards.
How many Michelin star restaurants are in the US?
275 on 3 October 2026, according to the MICHELIN Guide's own USA listings: 16 with three Stars, 40 with two and 219 with one, plus 447 Bib Gourmands. California has ten of the three-star restaurants, New York City five and Chicago one. New regional selections change these numbers several times a year; the next, for Texas, is due on 8 October 2026.
How many three-star Michelin restaurants are there in the world?
161 on 3 October 2026, according to the MICHELIN Guide's own worldwide listings, alongside 544 two-star and 3,172 one-star restaurants: 3,877 starred in all. France has the most three-star restaurants (30), then Japan (20). The totals change with every national ceremony.
Which country has the most Michelin stars?
France, by a wide margin. On 3 October 2026 Michelin's site listed 646 starred restaurants in France, including 30 with three Stars. Italy came second for starred restaurants (379) and Japan second for three-star restaurants (20). Monaco is listed separately from France.
What is the difference between a Bib Gourmand and a Michelin star?
A star rewards the cooking at any price; a Bib Gourmand rewards good cooking at good value. The Bib, named after Bibendum the Michelin Man, started in 1997, and its price limit varies by country. In New York in 2022 it meant two courses and wine or dessert for $49 or less.
What is a Michelin Green Star?
It was Michelin's sustainability distinction for restaurants, first awarded around 2020 and held by more than 600 restaurants. In May 2026 Michelin announced it would be gradually phased out, and in June it launched Mindful Voices, an editorial platform for people in gastronomy, hospitality and wine.
Do decor and service count toward a Michelin star?
No. Michelin awards Stars 'for the food on the plate' and nothing more. Decor, comfort, formality, the style of service and the wine list have no bearing on the award, which is why stalls, pubs and noodle shops can hold Stars alongside grand hotel dining rooms.
Can a restaurant give back a Michelin star?
There is no formal way to hand one back. Sébastien Bras asked in 2017 to leave the guide after 18 years at three stars, and Michelin let Le Suquet out of the 2018 edition, the first time it had allowed that. The restaurant returned in 2019 with two stars, without his consent.
What are Michelin Keys?
The hotel version of the stars, launched in 2024. One Key means a very special stay, two an exceptional stay and three an extraordinary stay. France came first with 189 hotels, followed by the US later in April 2024, and Michelin's hotel selection now covers 7,000 hotels.
